Are you tired of potatoes or rice as a side? You will fall in love with these Gluten-Free Bacon Dumplings. It is the perfect side dish to go with any stew or sauce. It is effortless to make, and you can make it in one bowl without making a big mess in your kitchen. When you are looking for an easy side dish, this will be the one you will come back over and over. My mom would usually make this one, as it is straightforward to make and fast. You will love these dumplings with Goulash, st. Martin Duck or any stew you can think of.
Czechs love Dumplings?
There are many variants of dumplings in Czech cuisine. Bacon dumplings must not be missing among them. They are a wonderful partner of sauerkraut, spinach, roast meats, goulash. It can be a tradition to put one bacon dumpling in soup in some Czech Republic regions. Bacon dumplings with eggs are a delicacy.
Is every bacon same?
In Czech, we do not use traditional bacon cut for cooking. We use different cuts of “fat” for cooking. Hence, if you translate Bacon Dumplings exactly, you would get Fat Dumplings.
Both of these cuts are actually fully cooked/smoked and can be eaten cold. Czech people like to cut small pieces and add them to Caartucerie boards for snacking.
Each cut of this meat has its advantages and supporters; most eaters like to enjoy both.
- The traditional Bacon is made from boneless pork flank and lacks skin.
- The Bacon we use for cooking is basically lard bacon, usually with the skin but without the presence of muscle.
Let’s get started:
We call Bacon Dumplings – “Spekove Knedliky. If you love bacon, you definitely have to try it. Such an easy recipe!!!
Get ready your bacon, bread, eggs. I love to use chives, but you can use any mix or herbs. You can use one time of herb or mix of herbs.
- 4 cups of cubed Gluten-Free white bread
- 1 packet of bacon or 1 cup of crispy bacon
- 4 eggs
- 1 cup Gluten-free flour
Start with Bacon
If you are using fresh bacon, start cutting all your bacon into small pieces and fry till crispy. There is no rule on what flavor of bacon you can use. I also like to use already cooked bacon Crumbles from Costco when I am on a time crunch.
Let bacon rest on paper towel after frying, to soak of extra fat from bacon.
- 1 packet of bacon or 1 cup of crispy bacon
Bacon Dumplings mix
While bacon is frying, cut all bread into cubes with crust included. Take a large bowl, as you will need space for mixing all ingredients together.
I use gluten-free white sandwich bread, but any bread is good if you do not follow a Gluten-Free diet. We do not have a favorite bread. We get what is on a shelf at the store at the time. Sometimes we grab Schar Gluten-Free bread or other times Traders joe GF bread.
- 4 cups of cubed Gluten-Free white bread (most of the time the whole package)
Wash your herbs and cut them finely. I love to use chives, but parsley or green onion would work great as well, or a mix of all those if you cannot decide.
- salt and pepper to taste
- 1 tsp of freshly grated nutmeg
- 1/2 cup of fresh herbs of your choice
- 4 egg yolks
Separate egg yolks from egg whites and add yolks, salt, and pepper to taste and a little bit of grated nutmeg. I love using fresh nutmeg. Time to add your crumbled bacon and mix all those goodies.
We still have milk and flour left to add. After you add your milk and flour, mix everything thoroughly and set aside for about 10 minutes to let the bread soak all the liquid.
- 1 cup of milk
- 1 cup of Gluten-Free flour
While your bread is soaking, grab another bowl and whisk egg whites into a stiff. Add whisked egg whites to your dumplings and fold gently, to not break too many air bubbles from egg whites. That would make your Bacon dumplings mix too runny. If that would happen, add a couple of Tbsps of Gluten-free flour or more bread.

Time to cook Bacon Dumplings
there are a couple of ways to cook dumplings. I prefer a mug or my little gadget which works on the same principle.
You can also make balls and cook in boiling water, but with the Gluten-Free version, they like to break, and you might end up with a pot full of mess. The mug holds them nicely together while cooking.
Prep coffee mugs with cooking spray or butter. I personally use a dumpling maker, which I brought from Czech, but before I had it, I used mugs and cannot see the difference. They work the same.
Fill your mugs about 2/3 full as they will cook, the dumpling will expand a bit.
Stovetop cooking
I tried two methods of cooking: – the first method is in a deeper pot with a lid, full of water. The coffee mugs should be submerged to about 2/3 of boiling water. Less is OK; make sure water is not splashing inside a mug.
I also add a silicone ring on the bottom of the pot to ensure the mug is not sitting right on the heated element. I never had a mug to crack for me, but you never know. Cover your pot with a lid to create steam while cooking for 20 min.
Instant Pot cooking
If you choose the Instant Pot method, it is very similar. Add 1 cup of water and placed the trivet at the bottom of the pot. Cooked dumplings for 15 minutes on a steam setting and let natural release work its magic. That means let’s sit for about 10 minutes after cooking is done. (make sure you are in seal position)
When your dumplings are done cooking, pop them out from your mug. If they are sticking a bit to your mug, take a skinny knife and separate dumplings from the sides of a mug.
Slice them to about 1/2 inch thickness and serve with your favorite dish.
What to serve with Bacon Dumplings
You can serve with about anything you wish. You can use the traditional way over a bed of sauerkraut. And garnished with fright onion.
- Chicken in Paprika sauce – I love to serve with Chicken in Paprika sauce. This is our favorite dish in my family.
- Stuffed pepper with Tomato sauce – This is an effortless dish. You can have cooked for under 60 minutes. Full of flavor and perfect for fall when our gardens are overproducing bell peppers.
- Czech Goulash – If you go to the Czech Republic, you for sure will see this combination in a restaurant. Just make sure you are eating in a Gluten-Free friendly restaurant, as these dumplings are traditionally made with gluten.
